My career started in the hospitality industry at age 12, working in local hotels and restaurants in the UK. From there, I went on to successfully complete a B/TEC Diploma before working as trainee manager at The Grims Dyke Hotel, Harrow. After completing my traineeship, I moved into the contract catering industry as a Butler and then Assistant Manager for Directors Table, London. In 1985 I joined the Royal Navy and completed my 706/1 professional qualification as a Chef and 706/2. I was also awarded a medal for campaign service in the Gulf, GSM Gulf and Northern Ireland, LSGC and Combined Service medals. I returned to the contract catering industry-managing businesses in London offering complete client services from Catering management to full facilities management. In 1997, my wife and I moved to Brisbane, Australia where I continued to work in the contract catering industry managing high profile businesses. From there I moved into sales for Douwe Egbert’s Coffee, before starting my own coffee roasting business Viva Dourado Coffee Company. In 2007, I started my consultancy business. This business now has five arms to it including training, business consultancy, marketing advice, mentoring and coaching and the supply of high technology cooking equipment. With over 32 years experience in business I am committed to offering professional advice with flair, passion and dedicated experience.

DCCC is a consultancy business offering professional advice specialising, but not limited to the hospitality industry. Based on years of practical experience, DCCC is able to provide clients with assistance in all areas including budgeting, operational procedures, business advice, auditing, training, and professional guidance to ensure a successful business. We also offer specialist services that cover all areas of the hospitality industry including culinary support, kitchen design, HACCP procedures, front of house service, bar management, food service training, sales and product management, marketing and brand management functions. Our business includes using the key components and training of John Maxwell team to encourage, grow and enhance business at all levels, including management, sales and leadership training.
